Meet Chef Greg Spaulding

In 2015 opened Middle Fork Kitchen Bar as the Chef de Cuisine under the tutelage of Mark Jensen. Ultimately, Spaulding would work with Chef Cole Arimes and his team for a year at Coles 735 Main and then become Executive Chef of West Main Crafting Co. in the Fall of 2018 for nearly two years.

After nearly 20 years of cooking professionally and working his way up from a pizza cook at Domino’s in 2001, Greg proudly opened Salt & Vinegar in February of 2021.

Early Life

Born in McAllen, Texas, Greg and his family moved to Lexington in 1987, when Greg was a mere three years of age. Greg and his two sisters and brother all made their way through the Fayette Co. Public School system. Greg himself graduated from Julius Marks Elementary, Morton Middle, and Henry Clay High School. His mother retired as a public school teacher and served her entire career of nearly thirty years at Julius Marks Elementary. His father is also retired as the former Forman of the Fayette Co. Public School Maintenance Department.

Moving Up

Upon graduating from Henry Clay High School in 2001, Greg began working as a pizza maker at Domino’s Pizza. He also enrolled in college at Lexington Community College, a subsidiary of the University of Kentucky. In 2004, Greg opened the first Puccini’s Smiling Teeth in the state of KY and would continue with Puccini’s until 2015, during which time, he was the Area Supervisor and opened five locations in the Lexington and Louisville areas. He would also receive an Associated degree in Business from Lexington Community College as well as a Bachelors Degree in History from the University of KY. Moreover, Spaulding won numerous local and regional pizza competitions, was inducted onto the United States Pizza Team where he would win awards in Italy and Australia at the World Pizza Championships and the Global Pizza Challenge, respectively.

Making His Name

In 2015, Spaulding decided to further his culinary ambitions in a more old-fashioned manner by opening Middle Fork Kitchen Bar as the Chef de Cuisine under the tutelage of Mark Jensen.
